We Believe Food Should Taste Like Itself
Somewhere along the way, we stopped expecting much from our ingredients.
Tomatoes became available year-round, but rarely tasted like summer.
Bread became softer and more predictable, but lost much of the character that grain once brought to the table.
Strawberries became something we could buy in every season, instead of something we eagerly waited for.
Convenience became ordinary.
So did settling.
We believe there's another way.
One where ingredients are chosen not because they're available, but because they're ready.
Where grain is valued for its flavor as much as its function.
Where seasons create anticipation instead of inconvenience.
Where extraordinary meals begin long before the recipe—with the people who grow the food and the care taken to produce it.
Our hope isn't simply to cook beautiful meals or bake beautiful bread.
It's to remind people what real food can taste like.

Meet the team behind the table
We're Lisa and Patrick Balcom—the husband-and-wife team behind The Unlisted Table.
Together, we bring more than 25 years of hospitality experience to every table we set. Both graduates of Johnson & Wales University in Charlotte—Lisa in Baking & Pastry Arts and Patrick in Culinary Arts—we've spent our careers immersed in restaurants, pastry kitchens, beverage programs, and hospitality. Those experiences continue to shape every menu we create and every guest we welcome.
Today, we bring that philosophy directly into our guests' homes through seasonal private dining experiences designed to feel personal, thoughtful, and effortless.
While Patrick leads the savory kitchen and seasonal menu development, Lisa brings her background in pastry, bread baking, wine, and hospitality. From fresh-milled breads and seasonal desserts to thoughtful service and menu planning, every experience is created together—from the first course to the final detail.
Our goal isn't simply to cook dinner.
It's to create an evening your guests will still be talking about long after the last plate has been cleared.
