Meet the Chefs Behind the Experience

We're Lisa & Patrick Balcom, the founders of The Unlisted Table.

For more than two decades, we've built our lives around food, hospitality, and the belief that some of life's most meaningful moments happen around a shared table.

Before The Unlisted Table, we owned and operated Farow, a farm-to-table restaurant known for its seasonal menus, scratch cooking, and close relationships with local farmers and producers. While the setting has changed, the philosophy remains the same.

Today, we bring that experience directly to you.

Every gathering is thoughtfully designed around the season, the ingredients available at their peak, and the people seated at your table. Rather than serving the same menu night after night, we create dining experiences that feel personal, intentional, and unique to each occasion.

Patrick brings a deep respect for ingredients, classical technique, and years of culinary craftsmanship. Lisa brings a passion for hospitality, storytelling, and creating experiences that feel both elevated and welcoming.

Together, we believe the most memorable meals aren't simply eaten—they're shared.

Because our menus change with the harvest, we do not offer pre-set menus more than a month in advance. This approach supports a more sustainable food system, reduces waste, and results in meals that are not only more flavorful—but more meaningful.

Rather than working from fixed menus, each dinner is designed around the very moment of the season and your gathering. Each dinner evolves with the season. We also intentionally limit gatherings to twenty guests or fewer to ensure every detail receives our full attention.
